Ingredients
- 6 medium potatoes
- 1 c. cheddar cheese, shredded
- 3/4 c. soup cream
- 3 green onions, chopped
- 1 tsp. salt
- 1/4 tsp. pepper
Method
- Cook potatoes in skins.
- Peel and dice up.
- Melt 4 Tbsp. butter and add cheese until softened.
- Blend in sour cream.
- Fold in potatoes and spoon into greased 2-quart casserole.
- Dot with 2 Tbsp. butter.
- Cover.
