Ingredients

  • 1/2 c. shortening, butter or butter-flavored Crisco
  • 1 c. packed brown sugar
  • 1 egg
  • 1/2 c. applesauce
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 1 Tbsp. brandy (optional)
  • dash of nutmeg
  • 2/3 c. mincemeat
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. milk
  • 1/2 to 2/3 c. chopped pecans

Method

  • Cream shortening, add sugar and mix.
  • Add egg, slightly beaten, and seasonings.
  • Beat together until blended.
  • Sift dry ingredients together; add mincemeat and nuts alternately with milk to first mixture.
  • Drop by teaspoons onto an oiled cookie sheet leaving an inch or so between cookies.
  • Bake at 375° for 10 to 12 minutes. Yields about 2 1/2 to 3 dozen cookies.
