Ingredients

  • 1 1/2 to 2 lb. ground beef
  • 2 cloves garlic, crushed
  • 1 medium chopped onion
  • 8 oz. sliced fresh mushrooms
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 2 to 3 splashes white wine (optional)
  • 3 eggs
  • Parmesan cheese to taste
  • salt and pepper to taste

Method

  • Cook ground beef, garlic and onions together in large skillet until meat is brown and onions are clear.
  • Drain grease.
  • Add spinach, mushrooms and wine (if desired).
  • Salt and pepper to taste.
  • Cover and simmer until well blended, about 4 to 5 minutes, stirring occasionally.
  • Remove cover.
  • Add eggs and cook until eggs are scrambled hard, stirring frequently.
  • Remove from heat, sprinkle Parmesan cheese to taste.
  • Serve immediately with crusty French bread.
  • Serves 4 to 6.
