Ingredients
- 1 1/2 to 2 lb. ground beef
- 2 cloves garlic, crushed
- 1 medium chopped onion
- 8 oz. sliced fresh mushrooms
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 2 to 3 splashes white wine (optional)
- 3 eggs
- Parmesan cheese to taste
- salt and pepper to taste
Method
- Cook ground beef, garlic and onions together in large skillet until meat is brown and onions are clear.
- Drain grease.
- Add spinach, mushrooms and wine (if desired).
- Salt and pepper to taste.
- Cover and simmer until well blended, about 4 to 5 minutes, stirring occasionally.
- Remove cover.
- Add eggs and cook until eggs are scrambled hard, stirring frequently.
- Remove from heat, sprinkle Parmesan cheese to taste.
- Serve immediately with crusty French bread.
- Serves 4 to 6.
