Ingredients
- 4 medium even potatoes
- 1 tsp. salt
- 2 or 3 Tbsp. melted butter
- 2 or 3 Tbsp. chopped fresh herbs (i.e., parsley, chives and thyme) or 2 or 3 tsp. dried herbs of your choice
- 4 Tbsp. grated Cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Method
- Peel potatoes if skin is tough, otherwise just scrub and rinse well.
- Cut potatoes into thin slices but not all the way through. Use handle of wooden spoon to prevent knife from cutting all the way through.
- Place potatoes in micro-safe dish or pan.
- Sprinkle with melted butter and chopped parsley, chives or thyme.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Work the grated cheese into the slices.
- Micro for another 4 to 6 minutes at High power until cheese is melted and potatoes are soft.
- Serves 4.
