Ingredients
- 1 med. onion
- 1 med. green pepper
- 2 tbsp. oil
- 1 pound scallops
- 1 can crushed tomatoes
- 1 (4 ounce.) can mushrooms
- 1/4 c. dry white wine
- 1 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 bay leaves
- 2 tbsp. parsley
- 2 teaspoon garlic
Method
- Combine onion, pepper, garlic and oil in 2 qt casserole dish.
- Cook, uncovered 3 min, adding remaining ingredients, except parsley, cook, covered 6 min or possibly till scallops are tender.
- Sprinkle with parsley.
- Serve with rice.
