Ingredients

  • 1 med. onion
  • 1 med. green pepper
  • 2 tbsp. oil
  • 1 pound scallops
  • 1 can crushed tomatoes
  • 1 (4 ounce.) can mushrooms
  • 1/4 c. dry white wine
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 bay leaves
  • 2 tbsp. parsley
  • 2 teaspoon garlic

Method

  • Combine onion, pepper, garlic and oil in 2 qt casserole dish.
  • Cook, uncovered 3 min, adding remaining ingredients, except parsley, cook, covered 6 min or possibly till scallops are tender.
  • Sprinkle with parsley.
  • Serve with rice.
