Ingredients

  • 1 peck ripe, firm apples
  • 2 qt. vinegar
  • 4 lb. sugar
  • 1/2 oz. mace (unground)
  • 1/2 oz. cloves (unground)
  • 1/2 oz. allspice (unground)
  • 1 tsp. mustard seed
  • few grains pepper
  • salt to taste

Method

  • Peel apples evenly and if perfect, leave them whole. Otherwise, cut in quarters.
  • Heat the vinegar and sugar until it boils; skim well.
  • Put the spices in a thin muslin bag and add to vinegar, then add all the apples.
  • Cook slowly until fruit is done.
  • Put in fruit jars.
  • Boil syrup down and pour over the fruit; seal while hot.
