Ingredients
- 1 peck ripe, firm apples
- 2 qt. vinegar
- 4 lb. sugar
- 1/2 oz. mace (unground)
- 1/2 oz. cloves (unground)
- 1/2 oz. allspice (unground)
- 1 tsp. mustard seed
- few grains pepper
- salt to taste
Method
- Peel apples evenly and if perfect, leave them whole. Otherwise, cut in quarters.
- Heat the vinegar and sugar until it boils; skim well.
- Put the spices in a thin muslin bag and add to vinegar, then add all the apples.
- Cook slowly until fruit is done.
- Put in fruit jars.
- Boil syrup down and pour over the fruit; seal while hot.
