Ingredients
- 1 c. sugar
- 1/2 c. white corn syrup
- 1 c. fresh unroasted peanuts
- 1/8 tsp. salt
- 1 tsp. butter
- 1 tsp. vanilla
- 1 tsp. baking soda
Method
- In a 2-quart glass mixing bowl (I like the big measuring bowl with a handle), stir together sugar, syrup, peanuts and salt. Mix well.
- Microwave on High for 6 to 9 minutes until light brown. Add vanilla and butter.
- Microwave on High for 1 or 2 minutes. Peanuts should be light brown and the syrup at the hard crack stage.
- Add baking soda.
- Stir until light and foamy.
- Pour on lightly buttered cookie sheet.
- Let cool at least 1/2 hour before breaking into pieces.
- Keeps a long time in tightly closed container.
