Ingredients
- 1 lb. boneless, skinless chicken breast, cut into 1/2-inch chunks
- 1 1/2 c. chicken broth
- 1 1/2 c. Minute rice
- 1 red pepper, cut in strips
- 1 zucchini, thinly sliced
- 1/2 tsp. grated lemon peel
- 3 Tbsp. lemon juice (fresh)
- 2 Tbsp. butter
- 1 Tbsp. cornstarch
- 1/2 tsp. garlic powder
Method
- Mix chicken, broth, rice, pepper, zucchini, lemon peel, lemon juice, butter, cornstarch and garlic powder in 2-quart microwave casserole.
- Cover.
- Microwave on High 10 minutes or until chicken is cooked through, stirring halfway through cooking time.
- Let stand 5 minutes.
- Stir.
