Ingredients

  • 1 lb. boneless, skinless chicken breast, cut into 1/2-inch chunks
  • 1 1/2 c. chicken broth
  • 1 1/2 c. Minute rice
  • 1 red pepper, cut in strips
  • 1 zucchini, thinly sliced
  • 1/2 tsp. grated lemon peel
  • 3 Tbsp. lemon juice (fresh)
  • 2 Tbsp. butter
  • 1 Tbsp. cornstarch
  • 1/2 tsp. garlic powder

Method

  • Mix chicken, broth, rice, pepper, zucchini, lemon peel, lemon juice, butter, cornstarch and garlic powder in 2-quart microwave casserole.
  • Cover.
  • Microwave on High 10 minutes or until chicken is cooked through, stirring halfway through cooking time.
  • Let stand 5 minutes.
  • Stir.
