Ingredients

  • 1 lb. lean ground beef
  • 1/4 c. chopped onion
  • 2 cloves garlic, minced
  • 3 c. (4 oz.) uncooked medium wide noodles
  • 1 c. sliced mushrooms
  • 1 (13 1/2 oz.) can beef broth
  • 1/8 tsp. pepper
  • 1 (8 oz.) container sour cream
  • 2 Tbsp. chopped parsley

Method

  • Combine beef, onion and garlic in 2-quart microproof casserole. Place in oven.
  • Cook on High 3 minutes.
  • Pause and stir; cook in microwave on High 2 minutes.
  • Stir in noodles, mushrooms, broth and pepper.
  • Cover with casserole lid or plastic and cook on half power 11 minutes.
  • Stir, cover and cook on half power for 11 minutes. Remove from oven and let stand, covered, 5 minutes.
  • Blend in sour cream and sprinkle with parsley before serving.
  • Serves 6.
