Ingredients

  • 4 medium potatoes
  • 1 tsp. salt
  • 2 Tbsp. melted butter
  • 2 Tbsp. herbs (fresh parsley, chives and thyme) or 2 tsp. dried herbs
  • 4 Tbsp. grated Cheddar cheese
  • 1 1/2 Tbsp. Parmesan cheese

Method

  • Peel potatoes if tough skin, otherwise scrub and rinse.
  • Cut into thin slices but not all the way through (use spoon handle to prevent cutting through).
  • Put potatoes in baking dish, fan them slightly.
  • Drizzle with butter, sprinkle herbs and salt.
  • Bake at 425° for 50 to 60 minutes.
  • Remove from oven, sprinkle with cheese.
  • Bake another 10 to 15 minutes or until lightly browned and cheese is melted.
