Ingredients
- 4 medium potatoes
- 1 tsp. salt
- 2 Tbsp. melted butter
- 2 Tbsp. herbs (fresh parsley, chives and thyme) or 2 tsp. dried herbs
- 4 Tbsp. grated Cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Method
- Peel potatoes if tough skin, otherwise scrub and rinse.
- Cut into thin slices but not all the way through (use spoon handle to prevent cutting through).
- Put potatoes in baking dish, fan them slightly.
- Drizzle with butter, sprinkle herbs and salt.
- Bake at 425° for 50 to 60 minutes.
- Remove from oven, sprinkle with cheese.
- Bake another 10 to 15 minutes or until lightly browned and cheese is melted.
