Ingredients

  • 4 large green peppers
  • 1 lb. chopped beef
  • 1 pkg. taco seasoning mix
  • 1 (8 oz.) pkg. grated Mozzarella cheese
  • 1 c. water
  • 1 1/2 c. cooked rice
  • 1 (8 oz.) can tomato sauce or Ragu sauce

Method

  • Cut off pepper tops and remove inner fibers and seeds.
  • Drop in boiling water; remove from fire and let stand 10 to 12 minutes. Drain.
  • Brown meat and add taco mix and water.
  • Simmer 15 minutes.
  • Add rice and mix.
  • Cut peppers in half and lay in pan. Fill peppers with mixture and bake in 400° oven for 45 minutes. Pour sauce and grated cheese over peppers 10 minutes before serving.
