Ingredients
- 4 large green peppers
- 1 lb. chopped beef
- 1 pkg. taco seasoning mix
- 1 (8 oz.) pkg. grated Mozzarella cheese
- 1 c. water
- 1 1/2 c. cooked rice
- 1 (8 oz.) can tomato sauce or Ragu sauce
Method
- Cut off pepper tops and remove inner fibers and seeds.
- Drop in boiling water; remove from fire and let stand 10 to 12 minutes. Drain.
- Brown meat and add taco mix and water.
- Simmer 15 minutes.
- Add rice and mix.
- Cut peppers in half and lay in pan. Fill peppers with mixture and bake in 400° oven for 45 minutes. Pour sauce and grated cheese over peppers 10 minutes before serving.
