Ingredients

  • 6 Large Yukon Gold Potatoes, Sliced Into 1/4-inch Thick Rounds
  • 1/3 cups Fresh Lemon Juice, Plus The Zest From The Lemons
  • 8 cloves Garlic, Minced
  • 1/2 cups Olive Oil
  • 1 Tablespoon Dried Oregano, Preferably Greek Oregano
  • Kosher Salt

Method

  • Preheat oven to 350°F.
  • In a large bowl, add the potato slices.
  • In a bowl, whisk together lemon juice, zest, garlic, olive oil and oregano. Pour it over the potatoes. Toss potatoes to coat them.
  • Spread potatoes on a sheet pan in a single layer and pour the extra lemon-oil mixture over the potatoes. Generously season with kosher salt.
  • Roast potatoes at 350°F for 1 hour until golden brown. Serve the potatoes hot or at room temperature.
