Ingredients
- 6 Large Yukon Gold Potatoes, Sliced Into 1/4-inch Thick Rounds
- 1/3 cups Fresh Lemon Juice, Plus The Zest From The Lemons
- 8 cloves Garlic, Minced
- 1/2 cups Olive Oil
- 1 Tablespoon Dried Oregano, Preferably Greek Oregano
- Kosher Salt
Method
- Preheat oven to 350°F.
- In a large bowl, add the potato slices.
- In a bowl, whisk together lemon juice, zest, garlic, olive oil and oregano. Pour it over the potatoes. Toss potatoes to coat them.
- Spread potatoes on a sheet pan in a single layer and pour the extra lemon-oil mixture over the potatoes. Generously season with kosher salt.
- Roast potatoes at 350°F for 1 hour until golden brown. Serve the potatoes hot or at room temperature.
