- 1 1/2 c. yellow corn meal
- 1/2 c. flour
- 1 Tbsp. baking powder
- 1 tsp. salt
- 2 Tbsp. sugar
- 1 c. milk
- 1 egg
- 3 Tbsp. melted butter
- 1 c. creamed corn
- 1/2 c. shredded Cheddar cheese
- 1/2 c. chopped onion
- 1/2 c. red pepper, chopped fine
Method
- Mix ingredients as listed, stirring well as moistened.
- Pour into well-greased 9-inch skillet.
- Bake at 425° for 25 or 30 minutes or until golden brown.
