Ingredients

  • Leaves of 2 lb. spinach, washed, drained, cut and rubbed with a teaspoonful salt a few times to reduce its volume
  • 2/3-cup flour
  • 1/2- cup extra virgin olive oil
  • 2/3-cup semolina
  • 1-1/4 cup plain yogurt (not low or non-fat)
  • 1 cup feta cheese, crumbled
  • 3 large eggs
  • 1 teaspoonful baking powder
  • 1/2 cup grated kosher cheese

Method

  • Mix all ingredients except spinach and kosher cheese in a large bowl by using an electric mixer for 3-4 minutes,
  • Add spinach into mixture, stir with a spoon or spatula
  • Pour the mixture into greased glass oven dish,
  • Sprinkle grated kosher cheese onto mixture,
  • Bake preheated 350 F for 40 minutes or until being golden color.
  • Remove oven, wait a half hour in room temperature, then serve it.
