Ingredients
- 1 can sauerkraut
- 1 lb. ground beef
- 1 head cabbage
- 1 c. uncooked rice
- 1 large can V-8 juice
- salt
- pepper
- 1 Tbsp. chopped onion
Method
- Boil cabbage, removing each leaf just as it becomes tender. Drain leaves.
- Mix ground beef, rice and onion.
- Salt and pepper to taste.
- Line bottom of 4 1/2-quart pot with sauerkraut.
- Place 3 to 4 tablespoons of meat mixture in center of leaf and roll, bringing in sides of leaf as you roll.
- Arrange cabbage rolls in pot, stacking as you go.
- Place remaining leaves over top.
- Pour V-8 juice over top.
- Simmer on low for 3 to 4 hours.
