Ingredients

  • 1 can sauerkraut
  • 1 lb. ground beef
  • 1 head cabbage
  • 1 c. uncooked rice
  • 1 large can V-8 juice
  • salt
  • pepper
  • 1 Tbsp. chopped onion

Method

  • Boil cabbage, removing each leaf just as it becomes tender. Drain leaves.
  • Mix ground beef, rice and onion.
  • Salt and pepper to taste.
  • Line bottom of 4 1/2-quart pot with sauerkraut.
  • Place 3 to 4 tablespoons of meat mixture in center of leaf and roll, bringing in sides of leaf as you roll.
  • Arrange cabbage rolls in pot, stacking as you go.
  • Place remaining leaves over top.
  • Pour V-8 juice over top.
  • Simmer on low for 3 to 4 hours.
