Ingredients

  • 1 c. all-purpose flour
  • 3/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. firmly packed dark brown sugar
  • 1/4 c. unsweetened cocoa
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground red pepper
  • 1 c. nonfat buttermilk
  • 1/4 c. egg whites
  • 1 Tbsp. vegetable oil
  • cooking spray
  • 2 Tbsp. finely chopped slivered almonds, toasted

Method

  • Combine first 8 ingredients in a medium bowl; make a well in center of mixture.
  • Combine buttermilk, egg whites and oil; add to dry ingredients, stirring just until dry ingredients are moistened. Pour batter into an 8-inch round cake pan coated with cooking spray.
  • Sprinkle with almonds.
  • Bake at 375° for 25 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan.
  • Serve warm.
  • Makes 8 servings.
