- 1 can (15 oz.) black beans, rinsed and drained
- 4 oz. Monterey Jack cheese, cut into 1/4 cubes
- 1 can (8 3/4 oz.) whole kernel corn, drained
- 1/4 c. sliced green onions with tops
- 3/4 c. thinly sliced celery
- 1 small sweet red pepper, diced
- 3/4 c. picante sauce
- 2 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 1/2 tsp. ground cumin
- 1 clove garlic, minced
Method
- Combine all ingredients in large bowl, mix well.
- Cover and chill several hours or overnight.
- Serves 8.
