Ingredients

  • 2 c. cut up cooked chicken
  • 1 can whole tomatoes
  • 2 Tbsp. chopped onion
  • 1 Tbsp. green chilies
  • 1/2 tsp. cumin
  • 1 c. sour cream
  • 3/4 c. Cheddar cheese
  • 1 c. Monterey Jack
  • 1 egg
  • 2 c. corn chips
  • 1/4 c. Cheddar cheese

Method

  • Combine chicken, tomatoes, onions, chilies and cumin.
  • Mix well.
  • Blend sour cream, 3/4 cup Cheddar, Monterey Jack and egg. Spread half the corn chips in casserole.
  • Layer with half chicken mixture and half the sour cream mixture.
  • Repeat and top with remaining chips and 1/4 cup Cheddar.
  • Bake until done.
