Ingredients

  • 4 cups assorted muskmelon balls or chunks (such as cantaloupe, honeydew, casaba, Crenshaw)
  • 4 ounces chevre, crumbled
  • 1 cup honey
  • 1 tablespoon lime juice
  • 1 tablespoon each fresh mint and basil, chopped into a fine chiffonade

Method

  • Prepare dressing by stirring together honey, lime juice, mint, and basil. Set aside to allow flavors to meld for at least 3 hours.
  • When dressing is ready, divide melon assortment into four serving dishes. Top each dish of melon with one ounce of the goat cheese crumbles. Finish with a generous drizzle of the honey herb dressing and enjoy.
