Ingredients

  • 1/4 cup ( 4 tbsp ) olive oil
  • 2 cups chopped onion
  • 2 cloves chopped garlic
  • 5 cups ( two Italian plum tomatoes, 28oz cans ) drained. I use the 28oz cans crushed tomatoes and put in everything.
  • 1 tsp dried basil
  • 1 tsp dried tarragon
  • 2 tsp dried oregano
  • 2 tsp salt ( I have been using 1 tsp since getting complaints )
  • 1 tbsp brown sugar
  • 6 oz tomato paste
  • pepper

Method

  • Heat the oil in a heavy sauce pan. When the oil is hot, add the chopped onion and garlic. Cook over medium heat until they are transparent. Add the tomoatoes, chopping them with your spoon in the pan. This is assuming you are not using the 28 oz cans of crushed tomatoes.
  • Rub the dried herbs between your hands and let them drop into the sauce. Add the salt, sugar, tomato paste and a few grindings of black pepper. Stir all ingredients together and simmer gently for 40 minutes, regulating the flame so that the sauce does not reach a boil.
