Ingredients

  • 1 1/2 pounds ground beef
  • 1 1/2 cups breadcrumbs fresh white
  • 1 large egg lightly beaten
  • 1 clove garlic peeled and minced
  • 1 tablespoon basil fresh chopped
  • 1 lemon
  • cooking spray
  • 4 spring onions cut into 1/2-inch lengths
  • 1 tablespoon olive oil
  • 4 breads flat, warmed
  • lettuce shredded
  • cherry tomatoes halved
  • lemon wedges to serve
  • tzatziki to serve

Method

  • Combine the beef, breadcrumbs, egg, garlic, basil, zest and juice in a bowl and mix thoroughly. Season with salt and freshly ground black pepper. With wet hands, shape mixture into 18 meatballs.
  • Preheat the broiler to high. Line a baking sheet with foil and spray with cooking spray.
  • Thread the spring onions and meatballs alternately onto four metal skewers. Season with pepper and brush with the olive oil. Place on prepared tray and cook under broiler for 10-15 mins turning occasionally, until cooked through.
  • Serve the skewers on flat breads with shredded lettuce and halved cherry tomatoes. Serve with lemon wedges and tzatziki.
