Ingredients

  • 1 1/4 lb. ground meat
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, unbeaten
  • 2 Tbsp. chopped onion
  • 2 Tbsp. minced parsley
  • 3/4 c. dry bread crumbs
  • 3/4 c. milk or tomato juice

Method

  • Place meat in bowl, add the remaining ingredients and mix thoroughly.
  • Pack the mixture in a 1 1/2-quart loaf pan.
  • Bake in preheated 350° oven on lower rack for 1 hour.
  • Pour off any fat that may have accumulated.
  • Serve hot or cold.
  • Mixture can be divided into 6 cups of a muffin tin.
  • Bake 30 minutes.
