Ingredients

  • 3 lb. lean ground beef
  • 2 eggs, beaten
  • 1 1/2 c. Italian style bread crumbs
  • 1 c. finely chopped onion
  • 30 oz. tomato sauce
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. parsley
  • 4 c. Mozzarella cheese
  • 1 green pepper, boiled and cut into rings

Method

  • Combine beef, eggs, bread crumbs, onions, 2/3 cup tomato sauce, salt, pepper and parsley.
  • Mix well and shape into flat rectangle on a piece of wax paper.
  • Sprinkle 3 1/2 cups of cheese over meat mixture.
  • Starting with short edge, roll up like a jelly roll and press ends of roll to seal.
  • Bake in shallow pan at 350° for 1 hour.
  • Drain excess fat.
  • Pour remaining sauce over roll. Garnish with 1/2 cup cheese and green pepper rings.
  • Bake an additional 5 minutes.
