Ingredients
- 1 jar salsa
- 1 can red beans
- 2 red bell peppers, chopped
- 1 red onion, chopped
- up to half a can of chilies in adobo
- 1 1/2 pound boneless skinless chicken thighs
- salt and pepper
- serve over rice, with cilantro and low-fat sour cream or yogurt
Method
- In your slow cooker, mix together beans, chilies, red peppers, and salsa. Put chicken thighs on top, season with salt and pepper, and sprinkle red onion over all. Cook on low for 8 hours.
