Ingredients

  • 1 box gelatin strawberry or raspberry
  • 1 15/16 cups mascarpone cheese
  • 1 5/8 cups greek yogurt
  • powdered sugar to taste
  • 2 egg whites
  • 2 tablespoons sugar
  • 1 5/8 cups raspberries

Method

  • Make the gelatin according to directions, and let cool slightly.
  • Whisk the mascarpone with the Greek yogurt to a creamy and homogeneous mixture.
  • Gradually, add the powdered sugar to taste.
  • Whisk the egg whites with two tablespoons of sugar, and gently mix with the cheese and yogurt mixture.
  • Refrigerate.
  • Pour the gelatin in dessert dish (save a little bit for decoration), and let it solidify.
  • When gelatin is ready, cover with yogurt cream and mascarpone, flatten, and refrigerate.
  • In a saucepan, heat the berries with a little sugar, and stir for a few minutes.
  • When it cools, pour this jam over the mascarpone and Greek yogurt.
  • Garnish with crushed meringue and gelatin in various shapes (use cookies cutters).
