Ingredients
- 1 box gelatin strawberry or raspberry
- 1 15/16 cups mascarpone cheese
- 1 5/8 cups greek yogurt
- powdered sugar to taste
- 2 egg whites
- 2 tablespoons sugar
- 1 5/8 cups raspberries
Method
- Make the gelatin according to directions, and let cool slightly.
- Whisk the mascarpone with the Greek yogurt to a creamy and homogeneous mixture.
- Gradually, add the powdered sugar to taste.
- Whisk the egg whites with two tablespoons of sugar, and gently mix with the cheese and yogurt mixture.
- Refrigerate.
- Pour the gelatin in dessert dish (save a little bit for decoration), and let it solidify.
- When gelatin is ready, cover with yogurt cream and mascarpone, flatten, and refrigerate.
- In a saucepan, heat the berries with a little sugar, and stir for a few minutes.
- When it cools, pour this jam over the mascarpone and Greek yogurt.
- Garnish with crushed meringue and gelatin in various shapes (use cookies cutters).
