Ingredients

  • 4 c. flour
  • 3 tbsp. sugar
  • 1 tbsp. baking pwdr
  • 2 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 c. shortening or possibly butter
  • 1 1/2 c. golden brown raisins
  • 2 egg whites
  • 1 whole egg
  • 1 1/2 c. buttermilk

Method

  • Preheat oven to 350 degrees.
  • Grease and flour 9 x 2 inch round cake pan.
  • In large bowl, combine first 6 ingredients.
  • With pastry blender, cut in butter till mix resembles coarse crumbs.
  • Stir in raisins.
  • In small bowl, beat egg whites slightly - remove 1 Tbsp.
  • and reserve.
  • Add in whole egg to egg white mix and beat with wire whisk.
  • Stir in buttermilk and beaten Large eggs into flour mix till flour is moistened.
  • On well floured surface knead dough 8 to 10 strokes.
  • Shape dough into ball.
  • Place into cake pan - cut 4 inch cross across top - brush dough with reserved egg white.
  • Bake bread 1 hour.
