Ingredients

  • 1/2 c. long grain rice
  • 1/2 c. sugar
  • 3 c. milk
  • 1/4 c. margarine
  • 2 eggs, separated
  • 1 tsp. lemon extract

Method

  • Combine rice and milk in top of double boiler. Cook over hot water for 45 minutes or until rice is tender. Stir in sugar, margarine and a pinch of salt. Beat the egg yolks.
  • Add a little of the hot mixture to yolks, then stir this into the rice mixture. Cook 5 minutes, stirring constantly.
  • Remove from heat.
  • Stir in extract.
  • Beat egg whites until stiff but not dry. Fold into rice mixture.
  • Serve warm or cold.
  • Makes 6 servings.
