Ingredients
- 1/2 c. long grain rice
- 1/2 c. sugar
- 3 c. milk
- 1/4 c. margarine
- 2 eggs, separated
- 1 tsp. lemon extract
Method
- Combine rice and milk in top of double boiler. Cook over hot water for 45 minutes or until rice is tender. Stir in sugar, margarine and a pinch of salt. Beat the egg yolks.
- Add a little of the hot mixture to yolks, then stir this into the rice mixture. Cook 5 minutes, stirring constantly.
- Remove from heat.
- Stir in extract.
- Beat egg whites until stiff but not dry. Fold into rice mixture.
- Serve warm or cold.
- Makes 6 servings.
