Ingredients
- 2 lb. carrots
- 1 large onion
- 1 large bell pepper
- 1/2 c. salad oil
- 1/2 c. vinegar
- 1 Tbsp. mustard (dry)
- 1 c. sugar
- 1 can tomato soup
- salt and pepper to taste
Method
- Mix the last 6 ingredients together.
- Cook carrots until fork-tender; cool.
- Slice onion and bell pepper.
- Put carrots in container, along with bell pepper and onion slices.
- Pour marinade over vegetables and let marinate overnight.
