Ingredients
- 1 medium head broccoli
- 1 medium onion, thinly sliced and separated into rings (I use purple onion)
- 1 jar (2 oz.) chopped pimento drained
- 3/4 c. sugar
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1/3 c. vegetable oil
- 3/4 c. red wine vinegar with garlic
- 1 clove garlic, crushed
Method
- Trim coarse stem ends and leaves from broccoli.
- Wash and cut lengthwise into 1/2 to 3/4-inch thick strips.
- Toss onion and pimento with broccoli.
- Set aside.
- Combine sugar, salt, pepper, oil, vinegar and garlic.
- Mix thoroughly and pour over broccoli and onion mixture.
- Marinate overnight, stirring occasionally. Drain.
