Ingredients

  • 1 medium head broccoli
  • 1 medium onion, thinly sliced and separated into rings (I use purple onion)
  • 1 jar (2 oz.) chopped pimento drained
  • 3/4 c. sugar
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/3 c. vegetable oil
  • 3/4 c. red wine vinegar with garlic
  • 1 clove garlic, crushed

Method

  • Trim coarse stem ends and leaves from broccoli.
  • Wash and cut lengthwise into 1/2 to 3/4-inch thick strips.
  • Toss onion and pimento with broccoli.
  • Set aside.
  • Combine sugar, salt, pepper, oil, vinegar and garlic.
  • Mix thoroughly and pour over broccoli and onion mixture.
  • Marinate overnight, stirring occasionally. Drain.
