Ingredients

  • 2 1/4 lb ripe tomatoes
  • 2 tbsp olive oil
  • 1 None medium onion, finely chopped
  • 2 clove garlic, minced
  • 4 tbsp fresh basil leaves, chopped + 4 tbsp leaves
  • 1 tbsp fresh oregano, chopped
  • 2 tbsp tomato paste
  • 1 None ready-made pizza dough
  • 1/3 lb mozzarella cheese, thinly sliced
  • None None mixed greens, to serve

Method

  • Using a sharp knife, make a small cross in the base of each tomato. Blanch tomatoes in boiling water for 1 min. Drain, cool slightly then peel off skin and discard. Coarsely chop flesh.
  • Heat oil in a large saucepan over medium heat. Add onion, garlic, basil, oregano and 1 tsp salt. Cook, stirring, for 2-3 mins or until onion is soft. Add tomato paste and cook for 1 min. Add tomato, bring to a boil then reduce heat and simmer, uncovered, stirring occasionally, for 30-35 mins or until thick.
  • Preheat oven to 425°F. Place pizza base on a large baking tray. Spread 1 cup tomato sauce over pizza base then top with mozzarella. Bake for 12-15 mins or until crust is crisp and cheese has melted. Sprinkle with extra basil. Serve with salad.
