Ingredients

  • 1 1/2 c. sugar
  • 1/2 c. white Karo syrup
  • 1 1/2 tsp. soda
  • 1 1/4 tsp. salt
  • 1/4 c. water
  • 2 c. raw peanuts (Spanish)

Method

  • Mix soda and salt together; set aside.
  • Combine sugar, water and syrup; bring to a boil.
  • Stir in peanuts gradually so as not to lose the boil.
  • Keep a rolling boil until peanuts pop and turn brown (309° on a candy thermometer).
  • Add soda and salt; stir well. Pour onto a well-greased cookie sheet.
  • Put cookie sheet on trivet so air can get under it.
  • When cold, break into pieces.
