Ingredients

  • 1/2 lb. (2 sticks) sweet butter
  • 1 c. granulated sugar
  • 2 eggs
  • 1 c. mashed ripe bananas
  • 1 3/4 c. unbleached all-purpose flour
  • 1/2 tsp. salt
  • 2/3 tsp. baking soda
  • 5 Tbsp. buttermilk
  • 1 tsp. vanilla extract
  • Cream Cheese Frosting (recipe follows)
  • 1 or 2 medium size firm, but ripe bananas, sliced
  • 1 1/2 c. walnuts

Method

  • Preheat oven to 350°. Grease and flour two 9-inch layer cake pans.
  • Cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Add 1 cup of mashed bananas, mixing thoroughly.
