Ingredients

  • 1 cup self-rising flour
  • 3/4 cup all purpose flour
  • 1 teaspoon ground ginger
  • 3/4 cup brown sugar
  • 3/4 cup butter melted
  • 2 eggs
  • 1 lime zested
  • 3 mangos 2 chopped, 1 sliced to serve
  • 3/4 cup coconut flakes toasted, to serve
  • 1/3 cup powdered sugar sifted
  • 1 tablespoon lime juice

Method

  • Preheat oven 350°F. Lightly grease and line an 8x4 inch loaf pan with parchment paper.
  • Sift together flour and ginger. Add sugar then fold in butter, eggs and lime zest. Fold in chopped mango until just combined. Transfer to prepared pan, smooth surface and bake for 50-55 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
  • For the icing, combine powdered sugar and enough lime juice to make a spreadable icing. Spread over cooled loaf. Top with sliced mango and toasted coconut.
