Ingredients
- 1 lb. dry beans (2 c.)
- 2 Tbsp. molasses
- 1 tsp. salt
- dash of pepper
- 1 heaping tsp. dry mustard
- 1/2 lb. piece salt pork
- 1 medium onion, peeled (left whole)
Method
- Wash beans and soak overnight.
- Need large bowl as beans will swell.
- Next morning, place drained beans in crock-pot.
- Bury onion and score salt pork (make gashes in it).
- In beans, add salt, pepper, dry mustard and molasses.
- (Be careful not to add too much molasses, as will make beans hard.)
- Cover with boiling water and cook on high in crock-pot all day.
