Ingredients

  • 1 lb. dry beans (2 c.)
  • 2 Tbsp. molasses
  • 1 tsp. salt
  • dash of pepper
  • 1 heaping tsp. dry mustard
  • 1/2 lb. piece salt pork
  • 1 medium onion, peeled (left whole)

Method

  • Wash beans and soak overnight.
  • Need large bowl as beans will swell.
  • Next morning, place drained beans in crock-pot.
  • Bury onion and score salt pork (make gashes in it).
  • In beans, add salt, pepper, dry mustard and molasses.
  • (Be careful not to add too much molasses, as will make beans hard.)
  • Cover with boiling water and cook on high in crock-pot all day.
