Ingredients

  • 1 1/2 pound meat (chicken, pork, lamb)
  • 2 onions, minced
  • 1 apple, minced
  • 2 c. broth or possibly stock
  • Pepper & salt to taste
  • 1 tbsp. curry pwdr
  • Oil

Method

  • Brown cut up meat in small amount of oil.
  • Add in minced onions and minced apple, broth or possibly stock, salt and pepper to taste and curry pwdr (more according to taste).
  • Simmer about 1 hour to blend flavors.
  • Serve over rice accompanied by side dishes of sauteed bananas, peanuts, hard boiled Large eggs sliced or possibly cubed, sliced cucumber and lowfat sour cream.
  • Also optional raisins and coconut and chutney.
  • May also be made with precooked meat.
  • Just make a rich sauce with meat stock and flour sufficient to thicken.
  • Flavor with salt, pepper and curry.
  • Then add in cut up meat and simmer for at least 1/2 hour.
  • Serve as above.
  • Great recipe for leftovers.
