- 1 medium bunch broccoli
- 4 c. water
- 1 c. chopped onion
- 1 c. 2% or skim milk
- 3 Tbsp. margarine
- 4 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. milk
- 4 chicken bouillon cubes
- 6 small broccoli flowerets, cooked and drained (optional)
- finely diced red sweet pepper (optional)
Method
- Peel thick stalks of broccoli; chop stalks and heads (about 4 cups).
- In 3-quart saucepan, bring water to a boil.
- Add broccoli and onion.
- Cook, uncovered, just until tender.
- Drain, reserving 2 cups liquid.
- In blender, place broccoli mixture and milk. Cover and blend until smooth; set aside.
