Ingredients

  • 1 medium bunch broccoli
  • 4 c. water
  • 1 c. chopped onion
  • 1 c. 2% or skim milk
  • 3 Tbsp. margarine
  • 4 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. milk
  • 4 chicken bouillon cubes
  • 6 small broccoli flowerets, cooked and drained (optional)
  • finely diced red sweet pepper (optional)

Method

  • Peel thick stalks of broccoli; chop stalks and heads (about 4 cups).
  • In 3-quart saucepan, bring water to a boil.
  • Add broccoli and onion.
  • Cook, uncovered, just until tender.
  • Drain, reserving 2 cups liquid.
  • In blender, place broccoli mixture and milk. Cover and blend until smooth; set aside.
