Ingredients

  • 1 c. all-purpose flour
  • 1 c. whole wheat flour
  • 1 c. packed brown sugar
  • 1 Tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. baking soda
  • 4 egg whites
  • 1 c. mashed bananas
  • 1/2 c. buttermilk
  • 1/3 c. applesauce
  • 1 tsp. vanilla

Method

  • Preheat oven to 350°.
  • Lightly coat a 9 x 5-inch loaf pan with nonstick cooking spray.
  • In a large bowl combine first six ingredients; set aside.
  • In another large bowl, beat egg whites until foamy.
  • Add bananas, buttermilk, applesauce and vanilla. Stir into dry ingredients until just blended. Pour into prepared pan and bake for 45 to 55 minutes or until golden brown.
  • Serves 12.
  • Each slice has 185 calories with 0.5 grams of fat.
