- 1 c. all-purpose flour
- 1 c. whole wheat flour
- 1 c. packed brown sugar
- 1 Tbsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. baking soda
- 4 egg whites
- 1 c. mashed bananas
- 1/2 c. buttermilk
- 1/3 c. applesauce
- 1 tsp. vanilla
Method
- Preheat oven to 350°.
- Lightly coat a 9 x 5-inch loaf pan with nonstick cooking spray.
- In a large bowl combine first six ingredients; set aside.
- In another large bowl, beat egg whites until foamy.
- Add bananas, buttermilk, applesauce and vanilla. Stir into dry ingredients until just blended. Pour into prepared pan and bake for 45 to 55 minutes or until golden brown.
- Serves 12.
- Each slice has 185 calories with 0.5 grams of fat.
