Ingredients
- 4 eggs
- 1 lb. cottage cheese
- 1 c. grated Romano cheese
- 1/2 c. chopped fresh parsley
- salt and pepper to taste
- 4 c. cooked elbow macaroni
Method
- In a bowl, beat the eggs well.
- Add the cottage cheese, grated cheese, parsley, salt and pepper.
- Mix well.
- Gently toss the macaroni into the mixture.
- Generously grease an 8 x 12-inch baking dish.
- Add the macaroni mixture.
- Bake in a preheated 325° oven for 1 hour.
- Makes 4 to 6 servings.
