Ingredients

  • 1 1/2 c. yellow cornmeal
  • 1 1/2 c. water
  • 1 Tbsp. cooking oil
  • 1/3 c. milk
  • 1 medium onion, grated
  • 2 eggs, beaten
  • 1 c. all-purpose flour
  • 3 tsp. baking powder
  • 2 tsp. salt
  • 1 tsp. sugar

Method

  • Cook cornmeal and water over medium heat until all water is absorbed. Remove from heat and stir in milk, oil and grated onion. Gradually add beaten eggs, flour, baking powder, sugar and salt. Stir to mix well. Refrigerate about 1 hour; remove and drop by teaspoon into hot grease. Cook over medium heat until golden brown. Yields 18 to 24.
