Ingredients

  • 2 Tbsp. plus 2 tsp. reduced calorie tub margarine
  • 2 c. diced red bell pepper
  • 1 1/2 c. sliced mushrooms
  • 1/2 c. minced green onions
  • 6 oz. imitation crabmeat
  • 1 baked 9-inch pie shell
  • 1/2 c. evaporated skimmed milk
  • 1/2 c. egg substitute
  • 3 oz. shredded Swiss cheese
  • 1/4 tsp. salt
  • 1/8 tsp. ground nutmeg

Method

  • Preheat oven to 350°.
  • In medium nonstick skillet, melt margarine.
  • Add peppers, mushrooms and green onions; cook, stirring frequently 3 to 4 minutes until tender.
  • Stir in crab and spoon mixture in the pie shell.
