Ingredients

  • 1 (2 lb.) beef flank steak
  • 1 large garlic clove, crushed
  • 1 c. dry sherry
  • 1/2 c. soy sauce
  • seasoned meat tenderizer
  • 4 green onions (scallions)
  • 1/4 c. tomato paste
  • 8 slices Monterey Jack cheese

Method

  • Pound flank steak with meat mallet until 1/2-inch thick. Sprinkle with tenderizer, garlic and green onions.
  • Roll up, lengthwise, jelly-roll fashion.
  • Cut roll into 8 slices and spear each slice on a skewer.
  • Place skewers into a shallow dish.
  • Mix sherry, soy sauce and tomato paste until smooth; pour over meat. Turn skewers and marinate at room temperature for 2 hours.
  • Drain skewers and reserve marinade.
