Ingredients
- 1 (2 lb.) beef flank steak
- 1 large garlic clove, crushed
- 1 c. dry sherry
- 1/2 c. soy sauce
- seasoned meat tenderizer
- 4 green onions (scallions)
- 1/4 c. tomato paste
- 8 slices Monterey Jack cheese
Method
- Pound flank steak with meat mallet until 1/2-inch thick. Sprinkle with tenderizer, garlic and green onions.
- Roll up, lengthwise, jelly-roll fashion.
- Cut roll into 8 slices and spear each slice on a skewer.
- Place skewers into a shallow dish.
- Mix sherry, soy sauce and tomato paste until smooth; pour over meat. Turn skewers and marinate at room temperature for 2 hours.
- Drain skewers and reserve marinade.
