Ingredients

  • 3 egg yolks
  • 1/2 c. sugar
  • 2 c. milk
  • vanilla extract

Method

  • In stainless steel or heatproof glass bowl or top of double boiler, beat egg yolks and sugar together until thick and creamy. In a saucepan, scald 1 cup milk, add vanilla and pour over the eggs; mix well.
  • Stir slowly and continually over a saucepan of simmering water until thickened slightly, about 10 minutes.
  • Remove from heat, pour in remaining milk; cool.
  • Pour into ice cream canister.
  • Freeze in maker according to directions.
  • Makes 4 to 6 servings.
  • May double recipe.
