Ingredients

  • 2 medium sweet potatoes, boiled, peeled and mashed
  • 1 cup firmly packed dark brown sugar
  • 1/2 cup canned sweetened condensed milk
  • 1/4 cup (1/2 stick) butter or margarine, melted
  • 2 Tbsp. flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 2 eggs, lightly beaten
  • 1 tsp. vanilla
  • 1 unbaked 9-inch pastry shell
  • 1-1/2 cups thawed COOL WHIP Whipped Topping

Method

  • Preheat oven to 400F.
  • Mix potatoes, sugar, milk, butter, flour, spices, eggs and vanilla until well blended.
  • Pour into pastry shell.
  • (Filling will come to top edge of pie shell.)
  • Bake 30 to 35 min.
  • or until top is puffed and browned.
  • (Filling will be soft, but will set while cooling.)
  • Cool completely on wire rack.
  • Cut into 12 slices to serve.
  • Top each serving with 2 Tbsp.
  • of the whipped topping.
