- 2 medium sweet potatoes, boiled, peeled and mashed
- 1 cup firmly packed dark brown sugar
- 1/2 cup canned sweetened condensed milk
- 1/4 cup (1/2 stick) butter or margarine, melted
- 2 Tbsp. flour
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 2 eggs, lightly beaten
- 1 tsp. vanilla
- 1 unbaked 9-inch pastry shell
- 1-1/2 cups thawed COOL WHIP Whipped Topping
Method
- Preheat oven to 400F.
- Mix potatoes, sugar, milk, butter, flour, spices, eggs and vanilla until well blended.
- Pour into pastry shell.
- (Filling will come to top edge of pie shell.)
- Bake 30 to 35 min.
- or until top is puffed and browned.
- (Filling will be soft, but will set while cooling.)
- Cool completely on wire rack.
- Cut into 12 slices to serve.
- Top each serving with 2 Tbsp.
