Ingredients

  • 4 Tbsp. butter
  • 2 to 3 boneless chicken breasts, cut into thirds
  • 1 can mushrooms
  • 1/2 c. onion
  • 1 garlic clove or 1 Tbsp. garlic powder
  • 1/2 c. cream or half and half
  • 1 (14 1/2 oz.) can diced tomatoes
  • 1 c. frozen tiny peas
  • 1/2 tsp. salt
  • 1 Tbsp. dried parsley
  • 8 oz. linguine
  • Parmesan cheese

Method

  • Brown chicken and onion in butter, making sure chicken is thoroughly done.
  • Add mushrooms, garlic, cream or half and half, parsley, tomatoes, salt and peas.
  • Simmer until peas are soft. Cook linguine.
  • Top linguine with chicken mixture and Parmesan cheese.
