- 4 Tbsp. butter
- 2 to 3 boneless chicken breasts, cut into thirds
- 1 can mushrooms
- 1/2 c. onion
- 1 garlic clove or 1 Tbsp. garlic powder
- 1/2 c. cream or half and half
- 1 (14 1/2 oz.) can diced tomatoes
- 1 c. frozen tiny peas
- 1/2 tsp. salt
- 1 Tbsp. dried parsley
- 8 oz. linguine
- Parmesan cheese
Method
- Brown chicken and onion in butter, making sure chicken is thoroughly done.
- Add mushrooms, garlic, cream or half and half, parsley, tomatoes, salt and peas.
- Simmer until peas are soft. Cook linguine.
- Top linguine with chicken mixture and Parmesan cheese.
