Ingredients
- 1/4 c. margarine
- 3/4 c. chopped celery
- 3/4 c. brown lentils
- 3/4 c. barley
- 1/4 tsp. pepper
- 1/2 tsp. garlic salt
- 3/4 c. chopped onion
- 6 c. water
- 1 qt. canned tomatoes
- 2 tsp. salt
- 1/2 tsp. rosemary
- 1/2 c. shredded carrots
Method
- Saute in a large pan:
- margarine, onion and celery.
- Add water and lentils, cook 20 minutes.
- Add tomatoes, barley, salt, pepper, rosemary and garlic salt; simmer 45 to 60 minutes, until barley is tender.
- Add carrots.
- Cook five minutes and serve.
- Serves 4.
