Ingredients
- 1 pkg. lemon gelatin (regular size)
- 1 1/2 c. boiling water
- 3/4 c. sugar
- 2 lemons (juice and grated rind)
- 1 can evaporated milk, chilled and whipped
- 1 (12 oz.) pkg. vanilla wafers or coconut macaroons
Method
- Mix together the first 4 ingredients and let congeal to thick consistency, but not firm.
- Fold in evaporated milk, chilled and whipped.
- Roll into fine crumbs vanilla wafers or coconut macaroons.
- Place half of the crumbs in the bottom of 9 x 13-inch pan.
- (I use Pyrex.)
- Pour in the fluff.
- Spread evenly and cover with remaining half of crumbs.
- Place in refrigerator until firm. Serves 12.
