Ingredients

  • 1 pkg. lemon gelatin (regular size)
  • 1 1/2 c. boiling water
  • 3/4 c. sugar
  • 2 lemons (juice and grated rind)
  • 1 can evaporated milk, chilled and whipped
  • 1 (12 oz.) pkg. vanilla wafers or coconut macaroons

Method

  • Mix together the first 4 ingredients and let congeal to thick consistency, but not firm.
  • Fold in evaporated milk, chilled and whipped.
  • Roll into fine crumbs vanilla wafers or coconut macaroons.
  • Place half of the crumbs in the bottom of 9 x 13-inch pan.
  • (I use Pyrex.)
  • Pour in the fluff.
  • Spread evenly and cover with remaining half of crumbs.
  • Place in refrigerator until firm. Serves 12.
