Ingredients
- 1 pound potatoes
- 2 eggs
- 3/4 cup flour
- 4 tablespoons granulated sugar
- 1 lemon
- salt
- peanut oil
- powdered sugar
Method
- Wash the potatoes well with a brush, place them in a stockpot with cold water and boil them for approximately 30 minutes. Drain the potatoes, peel them, and mash them with a potato masher.
- Cool the potatoes slightly and mix the zest and juice from 1 lemon, flour, eggs, sugar, and salt.
- Shape the dough into several links that are approximately 1.5 centimeters thick. Cut into pieces measuring 12 centimeters, and bring the ends together into a circle.
- Fry the doughnuts in oil at 350 degrees Fahrenheit in a generous amount of very hot oil until golden and drain them on paper towels.
- Serve sprinkled with powdered sugar.
