Ingredients
- 3 eggs, separated
- 3 Tbsp. flour
- 1 lemon, grated rind and juice
- 1/4 tsp. salt
- 1 c. sugar
- 1 c. milk
Method
- Beat egg yolks with sugar until light and fluffy. Add flour mixed to a paste with
- little of the milk. Stir in the rest of the milk, lemon, juice, rind and salt.
- Fold in stiffly beaten egg whites last.
- Put in unbaked 9-inch pie crust and bake for 15 minutes at 450°.
- Reduce heat and bake for 30 minutes at 350°.
