Ingredients

  • 1 1/4 c. sugar
  • 6 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 1/2 c. water
  • 3 egg yolks
  • 1/3 c. lemon juice
  • 2 tsp. grated lemon rind
  • 1 Tbsp. butter
  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 6 Tbsp. sugar
  • 1 tsp. warm water
  • 2 tsp. cornstarch
  • 1 (9-inch) baked pie crust

Method

  • Combine in saucepan the sugar, cornstarch, salt and water. Cook until thick and clear, stirring constantly. Beat together egg yolks and lemon juice. Add small amount of hot mixture to yolks first, then stir into custard and cook until mixture comes to a full boil again. Remove from heat. Stir in lemon rind and butter. Cover while making meringue.
