Ingredients

  • 6 large firm tomatoes
  • 2 c. toasted bread crumbs
  • 1 c. shredded Cheddar cheese
  • 1 1/2 tsp. dried basil
  • 1 Tbsp. dried parsley
  • 1 tsp. salt
  • 3/4 tsp. black pepper
  • 1/2 tsp. sugar
  • 1/4 tsp. minced garlic

Method

  • Wash tomatoes; cut a slice off stem end.
  • Scoop out center and mash; strain and save liquid.
  • Mix remaining ingredients and spoon into tomato cups.
  • Pour 1 tablespoon tomato liquid over each tomato.
  • Place in close fitting baking dish.
  • Add 1/4 cup hot water to dish.
  • Bake 15 minutes in 375° oven.
  • Serve hot.
