Ingredients
- 6 large firm tomatoes
- 2 c. toasted bread crumbs
- 1 c. shredded Cheddar cheese
- 1 1/2 tsp. dried basil
- 1 Tbsp. dried parsley
- 1 tsp. salt
- 3/4 tsp. black pepper
- 1/2 tsp. sugar
- 1/4 tsp. minced garlic
Method
- Wash tomatoes; cut a slice off stem end.
- Scoop out center and mash; strain and save liquid.
- Mix remaining ingredients and spoon into tomato cups.
- Pour 1 tablespoon tomato liquid over each tomato.
- Place in close fitting baking dish.
- Add 1/4 cup hot water to dish.
- Bake 15 minutes in 375° oven.
- Serve hot.
